Delicious Lentil Taco Bowls
INGREDIENTS
1 head of romaine lettuce, trimmed, washed, and separated into “boats”
1-15 oz can brown lentils, drained and rinsed
½ cup onion, diced
2 tbsp taco seasoning
¼ cup water
Salt to taste
1 roma tomato, diced
¼ avocado (optional)
Jalapñeo slices (optional)
Hot sauce
½ cup fat free refried beans, canned or homemade
INSTRUCTIONS
1). Heat a nonstick pan over medium high heat and cook the diced onion until beginning to brown and soften.
2). Add the drained and rinsed lentils along with 2 tbsp taco seasoning and ¼ cup water. Mix it well and allow it to cook for another minute or two, then salt to taste.
3). Heat your refried beans and then build your taco boats by dividing the beans and lentils between the boats.
4). Top with diced tomato, jalapeño, avocado, and hot sauce.
